Some sommeliers had already been in the process of pivoting before the pandemic hit. Jason Jacobeit, wine director of Bâtard restaurant in New York, and Daniel Jung, head sommelier of Tribeca Grill, will be opening Somm Cellars Wine & Spirits, a retail wine shop on the Upper West Side of Manhattan, in October. “I think it’s uniquely fortuitous timing,” observed Mr. Jacobeit with a small laugh. When their restaurants reopen Mr. Jacobeit and Mr. Jung plan to work there as well.

Spanning 1,300 square feet and located on the ground floor of One Waterline Square, Somm Cellars Wine & Spirits will offer a curated selection of wine and spirits varying in price and region, with a particular focus on the founders’ favorite—Burgundy—as well as a bar to host tastings and conversation with patrons. The store will blend white-glove service with Jacobeit and Jung’s best-in-class hospitality backgrounds to offer a sophisticated guest experience. Residents of Waterline Sq. will receive special benefits, including customized seminars and classes, expert consultations and on-demand wine delivery to the development’s residences and amenity spaces. Though Somm Cellars Wine & Spirits is set to officially open this fall, Jacobeit and Jung are already lending their vast expertise to Waterline Square, working with the development’s in-house lifestyle director to offer wine-focused virtual experiences for residents.
